Maisen's flagship sits a few streets behind Omotesando Hills in a converted pre-war public bathhouse — the high ceiling, tiled walls and original wooden beams of the sento are still in place. The kitchen fries pork cutlets tender enough to cut with chopsticks, from standard rosu and hire up to kurobuta black pork, served with shredded cabbage and rice. A separate takeaway counter sells the fillet katsu sando that made the name.
