The experience
A small Bib Gourmand beef-noodle shop on Kunming Street behind Ximen, built around long-stewed beef shin rather than the tourist-famous names on Yongkang Street. The kitchen runs two broths — 紅燒 braised and 清燉 clear — with an adjustable Sichuan mala version, and lets you specify how done you want the noodles. Tripe and tendon are ordered as often as the shin. Hot tea comes free, and pickled greens and chili oils are self-serve at the counter. Closed Mondays.
