The experience

A small Belleville bistro on Rue Jouye-Rouve where chef Raquel Carena has cooked since the 1980s, long before the neighbourhood was on any food map. The blackboard menu runs to braised meats, sweetbreads and market cooking with a serious natural wine cellar, served with famously no-nonsense Parisian brusqueness. It remains a favourite haunt of the city's own chefs.
