Los Cocuyos is a tiny standing-room taqueria on Bolivar in the Centro Historico, working the same corner since the 1980s. A row of bubbling copper cazos turns out tacos of suadero (griddled brisket), longaniza and offal cuts like tripe, tongue and cheek. It carries a Michelin Bib Gourmand and stays open into the early hours.
