A cafe worth a slow morning · New York, United States
A single-storey warehouse on Grattan Street with three skylights, a roll-up garage door and hanging plants, where Lance Schnorenberg and Tobin Polk roast Nordic-style light roasts on a Probat L12 at the back of the room. Sey buys nano- and micro-lots from Ethiopia, Colombia and elsewhere and pours single origins rather than blends, with pastries from L'Imprimerie. Open daily, from 7am on weekdays and 8am at weekends, closing at 5pm.
The roaster other New York roasters defer to, pouring its own micro-lots in a skylit Bushwick warehouse.
