The experience

A bún chả kitchen hidden down an alley at 74 Hàng Quạt that is roughly a metre wide and thirty metres deep, run by Đào Thị Mai Lan for twenty-five years. Charcoal grills, herb-sorting and drink-making all happen along the passage while diners eat on stools at the far end. Each portion is vermicelli, sliced grilled pork and patties in the sweet-sour dipping broth, with lettuce, perilla and bean sprouts. Lunch only.
