A long-running bánh cuốn counter at 66 Tô Hiến Thành, well south of the Old Quarter in Hai Bà Trưng, where the rice sheets are steamed to order over cloth and rolled around minced pork and wood-ear mushroom. Plates come with grilled pork and a bowl of dipping fish sauce, and dishes run 30,000–60,000₫. Open 6am to 8pm daily; the crowd is neighbourhood, not tour group.
