Founded on Konparu-dori in Ginza in 1935 and still the reference point for Edomae sushi in Tokyo. Omakase is served piece by piece across the counter — uni, otoro and shrimp are the pieces regulars talk about — with no garnish or theatre beyond the itamae's hands. It has never held a Michelin star, which is part of its reputation rather than a mark against it.
