A table people book ahead for · Marrakech, Morocco
A non-profit restaurant on Rue Allal Ben Ahmed in Gueliz, founded in 2012 by Nora Belahcen Fitzgerald, where between thirty and forty disadvantaged women a year complete a four-to-six-month culinary apprenticeship that usually ends in a job. The menu rotates daily and runs to tagines, sardine croquettes, beef pastilla and roast chicken, served indoors or on a large garden patio. Prices are low and the trainees do the cooking. It serves lunch only and closes on Sundays.
A working kitchen school where the day's menu is whatever the trainees are learning — and it is consistently the best-value lunch in Gueliz.
