The experience
A bare shophouse at 49 Bát Đàn that has been cooking one thing — Hanoi beef pho — for generations, and now carries a Michelin Bib Gourmand. The broth is clear and marrow-sweet, served the northern way with no herb plate: just rice noodles, thin beef and spring onion. The queue reaches into the street at breakfast, and the room is low stools, shared tables and no service to speak of. Two sittings a day, morning and evening.
