Opened in 2021 by Simone Caporale and Marc Alvarez in the Eixample, Sips reimagines the cocktail bar with no traditional counter, staff instead mixing at island stations among the guests. Named The World's Best Bar in 2023 and ranked No.3 in 2025, it runs a strict reservation policy and cutting-edge, flavour-led drinks.
