A cramped Shandong-style noodle shop down a lane off Kaifeng Street near Taipei Main Station, working from a beef stock the family says has been going for seventy years. The broth is deliberately plain — pure beef, no herbs and no spice blend — poured over heavy-gauge house noodles with tender local yellow-cow shin. Office workers and market traders fill it from opening onward. Cash only, and it closes on Sundays.
