The experience

The 2017 revival of the 19th-century Parisian bouillon — a workers' canteen serving traditional French food at rock-bottom prices — on Boulevard de Clichy at the foot of Montmartre. Three hundred seats under globe lights turn over steak frites, onion soup, snails and bœuf bourguignon with continuous service, and a full three-course meal with wine runs about €20.

Classic French cooking at prices no bistro can match, in a room that is loudly, unapologetically Parisian.
