A sixty-year-old stall in the Huaxi Street tourist night market, run by three people behind a counter with barely any seats, that has held a Michelin Bib Gourmand for several years running. Its one famous dish is 菊花肉麵 — pork jowl sliced so the grain of the meat opens like chrysanthemum petals — in a clear pork-bone broth simmered milky and finished with pepper and ginger. There is also a pork-tail bowl for the collagen. Everything costs under NT$100 and it keeps hours that suit nobody but itself.
